One of the summer news in our menu is the crouton with marinated trout, citrus cream cheese and marinated onion! A touch of freshness starting from a typical product of this area: trout.
Our trouts come from the Troticoltura Toscana in Licciana Nardi, in Lunigiana, in the heart of the Tuscan-Emilian Apennine park.
We chose to start our recipe with a local product. The recipe takes some time but you have to try!
We marinate the salmon trout fillets with dill, lemon and orange peel, salt and sugar for two days. Once ready, the trout fillets go on our homemade brioche bread. We add cream cheese with citrus pesto and finally our marinated onion!
